Dinner one

Crisp-skin chicken thighs

Skin down in a cold pan, left alone until it releases. The sauce is built in the fat that renders out. Around 30 minutes, one pan, and it tastes like something you'd pay for.

Dinner two

One-tray harissa salmon

Everything goes on a single tray, timed so the fish finishes exactly when the broccoli catches. Seven ingredients, 25 minutes, nothing to wash but the tray.

Dinner three

Butter beans with wilted greens

Pantry beans treated properly, finished with a scrape of charred lemon and good oil. On the table in 20 minutes and substantial enough to be the whole dinner.

Dinner four

pork and fennel ragù

A braise that gets to depth in 40 minutes instead of three hours, using pork mince and a lot of heat early. The polenta takes eight minutes while it finishes.

Dinner five

Friday fried rice

The one meal designed around your fridge instead of a shopping list. A structure rather than a recipe, so Saturday starts empty.
